Cook your diced purple potatoes in boiling salted water. In the meantime, slice a shallot and brown it in a pan with a little EVO oil. When your potatoes are soft, add them to your shallot for seasoning and then blend until creamy. Put a few slices of bacon in a non-stick frying pan and brown them without adding any fat.

Cook your pasta in boiling salted water for 11 minutes, then drain all cooking water from the shapes (place them upside down on a clean tea towel).

Stuff Pumpkin with your creamed purple potatoes, add a few drops of sour cream and a slice of crispy bacon.
