Put some fresh caprino cheese in a bowl, add a few tablespoons of extra virgin olive oil and freshly ground black pepper. Mix well using a fork.

Cook your pasta in boiling salted water for 13 minutes and drain to remove all cooking
water from your shapes (place them upside down on a clean tea towel).

Stuff Sky with your caprino cheese cream and place a very thin slice of radish, a few fresh peas, some lightly toasted pine nuts and a mint leaf on each shape.
