In a bowl, gently mix the mascarpone with a tablespoon of powdered sugar. Coarsely chopthe canned cherries. Grate the dark chocolate into flakes.

Cook the pasta in boiling sugared water for 12 minutes, drain eliminating the cooking waterfrom inside the shapes (place them upside down on a clean cloth).

Fill the Love Me Tender with the mascarpone cream, garnish with the cherries, a sprinkling of chocolate shavings, and a few mint leaves.
